Places We’re Dreaming About: Aspen, Colorado

A rustic-chic idyll for jet setters and nature-lovers alike.

In each installment of “Places we’re dreaming about,” we offer you a mental escape to one of our favorite destinations. Exploring from afar, we share special spots for you to bookmark for future travel—plus some transporting cocktail recipes from local mixologists that you can mix up at at home while plotting your next trip.

Prized for its make-you-gasp Rocky Mountain views, Aspen represents the American West at its finest. Whether in the height of the ski season, during blue-sky summer days, or in fall when the namesake trees turn golden, Aspen glitters year-round.

The iconic Hotel Jerome opened in 1889 during the height of Colorado’s silver boom, and the hotel’s J-Bar has been one of the town’s favorite watering holes ever since. With an Old West feel, J-Bar is steeped in genuine history—from its original wood bar to the Prohibition-era cocktails on the menu. However, it’s also the kind of casual gathering place where visitors feel comfortable peeling off their ski jackets to tuck into the bar’s legendary burger or stopping for a cocktail straight from the hiking trail. “It’s on everyone’s bucket list,” says the hotel’s food and beverage director Anjoleena Griffin-Holst. “You’ll be bellied up to the bar and there will be locals, returning guests, and then you’ll say, ‘Omigosh is that Leonard DiCaprio having a beer?’” Griffin-Holst also notes that Hunter S. Thompson famously held court at J-Bar’s tables (and the bar’s manager was also Thompson’s campaign manager when he ran for sheriff of Aspen!). The hotel recently celebrated its 130th anniversary, and plans to reopen to the public in mid-June. Until then, you can try one of J-Bar’s classic drinks at home.
