Sassy Sandwiches: Herbed Goat Cheese, Fig, and Cucumber

When the warm, sunny days of late summer begin to slide into drizzly nights and chilly, dewy mornings, we get a hankering for rich, flavor-packed meals that leave us feeling balanced and satisfied. Enter the sassy sandwich, a grown-up take on a convenient standby. In our previous edition, we tackled an upscale chicken salad with a hint of spicy curry. Today we’re going just a little bit sweet, with this original recipe featuring herbed goat cheese, figs, and cucumbers on a crispy baguette.

This savory-fruity sandwich works perfectly with a mixed-greens salad for lunch, or alongside a hearty bowl of soup or stew for dinner. Because you can switch out the herbs, it will complement a huge variety of other recipes—and please dozens of discerning palates, making it perfect for last-minute guests, vegetarians, and no-stress group luncheons. Just arrange the sandwiches on your favorite wood or ceramic plates, and pair them with linen or cotton napkins in two mix-and-match patterns or hues.

For the work week, we slice the cucumbers and make the herbed cheese mixture and the fig spread in advance, then store them in separate containers. We tuck these, an arugula salad, and a bag of veggie chips in our lunch sacks, and voilà—the ultimate brown-bag lunch.

Herb Goat Cheese, Fig. and Cucumber Sandwich on a Toasted Baguette

Makes 2 sandwiches

  • 20 ripe figs
  • 1/4 cup water
  • 1/4 cup lemon juice
  • 1 teaspoon honey
  • 6 ounces spreadable goat cheese
  • A small handful of fresh dill (or other herbs of choice)
  • 2 large cucumbers, peeled and sliced
  • 1 large baguette, cut in 4 equal pieces

1. In a food processor, pulse the figs, water, lemon juice, and honey until they become a spreadable consistency.

2. Cut each baguette quarter in half lengthwise. Toast the tops in a toaster oven or under a broiler until warmed and light golden brown, less than 1 minute.

3. Spread each baguette bottom with 1 1/2 ounces of goat cheese, sprinkle with fresh herbs, and top with 1/4 of the cucumber slices. Spread each baguette top with the fig spread, and assemble into sandwiches.
